Going grain free dramatically changed my life.

To be honest, as I started this journey of going grain free in January of 2019,  I was a little nervous and skeptical. I knew that I would crave that slice of gluten free bread, rice and potatoes. And at the same time,  I realized that it was ridiculous to allow food to have that control over me, and more importantly have a negative impact on my health.

So my question is, why do we struggle to stay grain free?

Dr. William Davis, cardiologist and author of Wheat Belly, states that all grains contain a gliadin protein that when eaten the “small peptides bind to the opiate receptors in the brain”.  And that is the challenge. Stopping the grains will send our bodies into a state of withdrawal. You may be a little irritable for those 5-7 days you remove the grain and some individuals will believe that since they feel “awful” their body needs the grains.

Not true.

Ideally, you should choose a time that is not stressful.  You wouldn’t want to schedule it if have finals, demanding work deadline etc. You will feel like you have the flu and some will have it mildly while others may struggle for those 10 days.

So briefly, there are three steps to take when you choose to take on this lifestyle change, this is not a diet. You will need to do the following: eliminate grains; eat real, single ingredient foods; and manage carbohydrates.

Eliminate grains, no wheat, corn, barley products, oat products, rice products and look for hidden sources in everyday items such as soy sauce, soup mixes etc.

Eat real, single ingredient foods such as the following: all vegetables, except potatoes; meats, ideally pasture/grass fed; eggs; raw or dry-roasted nuts and seeds; and real cultured cheeses. Avoid hydrogenated oils, pre-packaged foods, alcohol, and condiments that contain high-fructose corn syrup.

Manage carbohydrates at every meal, never exceeding 15 grams of net carbohydrates per meal, or per 6 hour period while the body is in digestion mode. A net carbohydrate is the carbohydrate total of a food item, minus the fiber total, to get the net carbohydrate. An example would be the following: 1/2 cup of berries has 15 gm carbohydrates, minus its 3 gm of fiber, equals a net of 12 grams of carbohydrates per 1/2 cup of berries.

I am only giving a brief introduction as how to live grain free. There are many books that have no grain recipes and I highly recommend reading Dr. William Davis books. It will open your eyes as to how we are damaging our health eating the Standard American Diet (SAD).
